Calling these Asian-style would be redundant, right?
-Mini Cucumbers
-Salt (1.5 tsp)
-Garlic (4 cloves)
-Sugar (4 tsp)
-Sesame Oil (3 tsp)
-Lime (1)
-Cut ends off of mini cucumbers
-Using a mallet (or meat tenderizers), use the flat side to crush the cucumber. Afterwards, slice cucumbers in 2 inch pieces and place in a mixing bowl.
-After all cucumbers have been sliced, add salt
-Toss in bowl to mix in the salt
-Let cucumbers sit in bowl until liquid drains out of cucumbers
-After about 40 minutes, take handfuls of the cucumber and squeeze excess water and place in a separate bowl
-Take cloves of garlic and chop and add to cucumbers
-Add sugar and sesame oil, squeeze lime
-Optional: if you like spice, add chili to taste
-Mix with chopsticks
-Cover and let sit in refrigerator
